Hi everybody!
I'm starting to settle in now that I have been here a few months. We started a new menu - hopefully everybody has had a chance to try something new on the menu. One of the new items that I would like to feature in this article is the coffee and cocoa rubbed smoked ribs. We have a new smoker on premise and I plan to use it to it's fullest potential. We smoke our ribs for 3 hours and then top with our Mango BBQ Sauce. All house-made for your enjoyment. Recipe as follows.


  • 1 tbsp. olive oil

  • 3/4 cup diced onion

  • 1 tbsp. fresh chopped garlic

  • 2 cups ketchup

  • 1 cup chicken broth

  • 1 cup diced mango

  • 1/2 cup hoisin sauce

  • 1/2 cup cider vinegar

  • 1/4 cup bourbon

  • 2 mild chili peppers, seeded

  • 2 tbsp. brown sugar

  • 2 tbsp Worcestershire 

  • 1 tsp. lemon zest 

  • 1/2 tsp. black pepper

  • dash of cayenne

  • 2 tsp. ginger, fresh grated


  • Heat oil, garlic, and ginger over medium heat and saute for about 2 minutes

  • Do not brown the garlic

  • Add the bourbon to deglaze pan and reduce by half

  • Add vinegar and sugar, bring to a boil for about 5 minutes 

  • Add the rest of the ingredients and let simmer for about 20 minutes

  • Puree the sauce with wand blender until smooth, store in the refrigerator until needed
